As previously posted, I’ve been taking cake decorating classes. I just recently started the Intermediate classes. Well it came time for our company picnic, and I went to price a “cool” cake. HOLY COW!! It was going to be like $2,400!! So being the enterprising person I am, I did it myself! :o)
Ok, for honesty’s sake. I bought the cakes, UN-iced, from a local store, cut them into shapes, iced and decorated them. They turned out pretty good if I do say so myself! Everyone liked them (as far as I could tell, since they were all gone by the end of the picnic!! LOL). And in the process we saved about $2,200! Hmmm, now to figure out how to get my boss to add even half that to my check! LOL
Oh yeah, that’s the picture of the cakes (six of them) all lined up before
they were cut! Not bad, huh?

I am so excited! Finally, a Freebirds has opened near our house!!!
Woo hoo!!! If you’ve never been there, it’s an awesome burrito
place…. Puts Chipotle to shame, not necessarily on size (freebirds
has four sizes of burritos) but on quality and options (freebirds has
four different flavors of tortillas, two cheese options, multiple
salsa options, oh yeah and you get to choose white or dark meat
chicken…. Etc. Etc.)
Jack and I have been stalking this place waiting for it to open. If
you haven’t tried it, you seriously need to find a Freebirds near you!!!

Sammich

We’ve been using e-mealz.com for our menu planning lately. Everything
has been terrific and super easy, but I have to say this one is my
favorite so far! It’s a simple sandwich (nicknamed sammich now!).
Turkey, French bread (whole wheat in this case), add some butter and
garlic powder on one side, some apricot preserves on the other, bake on 350 for about 25 minutes and…. Yumminess!!! :o)
(NOTE: This photo was pre-baking, so just imagine the cheese all melted and runny for a post-baking picture!)
(OTHER NOTE: This is NOT a one person sammich! It’s at least two, maybe even three with the half-loaf we used! Do not try to eat this alone!)

Some of you may not know that Jack was born and raised in Houston. That’s where I met him (courtesy of a Yahoo chat room!). We’re watching the feed on DirectTV from KHOU in Houston as they cover the approach of Hurrican Ike. It hurts our hearts to see and hear about places we knew and loved. Back then we would just start driving and end up in Galveston, or Kemah or Bolivar Peninsula… all these places that are currently or about to be under water.
Tonight our thoughts and prayers go out to those in the Bayou City area.

So I realized I haven’t posted any pictures lately! This one is a
project I’m working on for a baby gift (it’s pink, so that eliminates
at least one of my pregnant blog readers!) :o)
It will eventually, magically (LOL) turn into a baby blanket. I’ll
post a picture of the finished product once it’s complete.

Today, we’re doing a little reminiscing. Watching TV and reminiscing.
It was three years ago… that was a busy year come to think of it! We’d just bought our first house. I was traveling a lot for work, and we finally finished a big project at the very end of July. We decided to take a vacation to visit Jack’s mom & step-dad in Gulfport, Mississippi. It was a great week. We went to all the casinos with him, went to all these great little shops in Waveland and Bay St. Louis with her. We even took a side trip to the French Quarter in New Orleans, and the aquarium… Jack’s first time to New Orleans.
Little did we know that two weeks later it would be changed forever.
So this morning as we watched Gustav come ashore in Louisiana we remembered. Jack called his mom (they’ve since moved to Texas, and actually just closed on their house in Gulfport like last month!) and we were all thankful that we didn’t have to worry this time like we did three years ago. When we still hadn’t heard from them three days after the storm, Jack was ready to head down and search for them!
Oh, and about that busy year… Katrina was in August, my closest friend got married in October, and Jack’s accident was in November (which pretty much took up the rest of the year!). So yeah, a busy year.
And three years later, we’ve all come a long way!
